Soft Peanut Butter Cookies

Recipe #17911 | 38 min | 30 min prep | add private note

By: Sackville
Jan 24, 2002

These are the ultimate rich peanut butter cookie. Definitely not for every day, but great when you want a special treat, maybe for a child's birthday party or a potluck.

SERVES 10 , 4 dozen filled cookies (change servings and units)

Ingredients

FILLING

Directions

  1. 1
Cream together shortening, peanut butter and sugars.
  2. 2
    Add vanilla.
  3. 3
Add eggs, one at a time, beating well after each one.
  4. 4
Mix together flour, baking soda and salt.
  5. 5
Add dry ingredients to creamed mixture.
  6. 6
Shape into 1 inch balls and place on ungreased baking sheets.
  7. 7
    Flatten slightly with a fork.
  8. 8
Bake at 375 F for about 8 minutes until golden. When you take them out, they will be a bit soft but leave them on the sheet for a couple minutes and they will continue to cook.
  9. 9
Remove from the sheet and cool on wire racks.
  10. 10
Meanwhile, in a mixing bowl, beat filling ingredients until smooth.
  11. 11
Spread on one half of cool cookies and top each with another cookie.

Very Good for the Peanut Butter Lover! Also Very Rich! As mentioned by Sackville they would be great for special occasion. We could only eat one and thats enough (potentially a good thing I suppose LOL). We had No problem with the dough being crumbly or crispy and I followed the recipe exactly as written. Thanks for sharing this recipe. I am a cookie connoisseur of sorts I always appreciate a new twist on a cookie.

These cookies taste great and they are soft. The only problem I had was that the dough is very crumbly. By the end of the batch I had a bunch of small crumbs so I threw the end away. The cookies tasted very good though. Thanks!

These were great! A classic peanut butter cookie without the filling and an extra special touch with. I used a cookie scoop (like an ice cream scoop but a bit smaller) to make a uniform size/shape for the sandwich halves.

These cookies are dynamites! More on the crispy side, but delicious treats!
