Snap Peas and Red Onions

Peas and onions with an Asian touch.This is a great side or serve over rice for a light crisp meal. If there is left over add a sprinkle of rice vinegar and chill for a crisp salad.

SERVES 4 -6 (change servings and units)

Ingredients

  • 1 tablespoon oil
  • 1/2 teaspoon ginger, minced
  • 6 ounces red onions, diced
  • 1 clove garlic, minced
  • 6 ounces fresh snap peas, sliced on a angle
  • 1/4 teaspoon sugar
  • 1-2 teaspoon soy sauce, to taste

Directions

    Coat bottom of hot pan with oil adding everything in order listed.

    Stir frying over high heat.
  3. 3
    Stirring each ingredient before adding the next ingredient.

    Cook till tender crisp!

I had an all cold lunch for friends and this was one of the dishes. It was excellent served cold. I did it the day before (as with most of the meal) and just pulled it out of the fridge and served it. I thought it was just great!! Will bedoing the same thing again I'm sure. Thanks Rita.

    Easy and decicious. So good that there was only about 5 pea pods left over when when my DH and I were finished. I didn't have fresh ginger on hand so used ginger paste. Next time I'm going to wait a little longer to toss in the onion as some were burned by the time the peas were tender. It was still yummy. Thank you!

    This was a very good side dish. I used Teriyaki sauce in place of soy sauce cause I didn't have any on hand. It was still very good. Thanks for sharing your recipe!

    A very nice change of pace for sweet snap peas. It was hot here today so I made this up in the morning and chilled it as a salad for dinner tonight. The suggested rice vinegar seemed just right.
