Smoked Salmon Omelet With Red Onions and Capers

I love smoked salmon, cream cheese, red onions and capers on a bagel. This uses the same ingredients in an omelet.

SERVES 4 (change servings and units)

Ingredients

    Whisk eggs, salt and pepper in a large bowl to blend.
  2. 2
    Melt 2 teaspoons butter in a 8-inch diameter nonstick skillet over medium heat.
  3. 3
    Ladle 3/4 cup of the egg mixture into the skillet.
  4. 4
    Cook until eggs are softly set, stirring often and lifting edge of eggs to allow uncooked portion to run under, covering skillet if necessary to help set the top.

    Place 1/4 of the salmon on half of the omelet.
  6. 6
    Sprinkle with 1 tablespoon onion and 1 teaspoon capers.
  7. 7
    Top with 2 tablespoons cream cheese.
  8. 8
    Fold omelet in half and slid out onto plate.
  9. 9
    Repeat with ingredients to make 3 more omelets.

    When I'm queen, I'll eat this every morning! Delicious and decadent. I made just a couple of changes: We only made 2-egg omelets instead of 3. And I garnished with a dollop of sour cream and a sprinkling of fresh dill. The garnishes really bring out the richness and flavor of the other ingredients.

    Oh my word, this was so good! I made 2 individual omelets for DH & myself today & served them w/homemade bread. I used all ingredients, but admit I did not really measure them precisely. When I reduced the recipe to single servings, I wondered at 1st how I would manage cooking omelets in 1/2 tsp butter but saw in the prep steps that its 2 tsp butter per omelet for a total of 8 tsp butter. Congrats on your Wk 3 Football Pool win, but I feel like the winner for having found this recipe. Thx for sharing it w/us.
