Slow Cooker French Onion Soup

I made this fantastic recipe for a big batch of onion soup that You can freeze in portions to use later. Serve this with a lovely red wine and salad and voilà for a romantic meal. These are 14 large servings so if you are serving this before a meal reduce the amount of soup in your bowl.

SERVES 14 (change servings and units)

Ingredients

For 2 servings

  • 2 tablespoons sherry wine (optional)
  • 2 slices toasted crusty bread
  • 2 tablespoons grated parmesan cheese
  • 1/4 cup shredded swiss cheese

Directions

    Over medium heat sauté the onion in butter until soft and translucent and caramel colour. Make this in 3 batches.

    Place onions in slow cooker.
  3. 3
    Deglaze cooking skillet with some of the beef stock;this is the secret to that taste.

    Add to slow cooker along with the remaining beef broth (your own homemade or powdered mixed with boiling water).

    Add Worcestershire sauce, thyme and bay leaf.

    Cover; cook on High for 4 hours or on low for 6-8 hours.

    Add salt and pepper to taste. Remove bay leaf.

    Divide soup into appropriate containers.

    Seal and freeze.

    When ready to enjoy your French Onion Soup.

    Remove from freezer and place in a microwave dish with 2 tbsp sherry; heat for 5 minutes.

    Add Parmesan cheese to your onion soup bowl.Place one slice of toasted bread over the cheese. Fill bowl with soup.

    Top with shredded Swiss cheese.

    Place under broiler to melt your cheese.

    Tip: When adding your ingredients to the slow cooker make sure they are all hot.

    Please use the processor to slice your onions. I once read 'If I use my food processor just to make onion soup it will be worth it'.

I have always wanted to know how to make French Onion Soup and now I do! This tastes just like it's supposed to. It's a perfect recipe! The only problem I had was trying to keep from crying while I chopped all those onions! Made for ZWT5 - Epicurean Queens

    Delicieux, Sauge!I love recipes like this where you can freeze it so now I have 6 huge portions set aside for when life gets busier (or I get more tired?). I deglazed my pan with some merlot and later used merlot for STEP 11. I used Beef Stock which yielded me 5 cups of stock and then made some beef cubes/boiling water for rest of stock. I also used unsalted butter. I mixed the bay leaf, worcestershire, thyme, salt, and pepper in with the onion prior to pouring on the hot stock-just thought it would stir in easier. Used slices from French Bread Rolls for the bread portion. This recipe did not fit into my crock pot so simmered it in my stock pot on the stove instead. If it was a half recipe it would have fit into my slow cooker. I even put some of this into Crock Pot Beef Burgundy b/c I did not have a 12 ounce can of beef broth for that recipe (can had 10.5 ounces). Merci Sauge for sharing your wonderful recipe and also the helpful hints about using the food processor for slicing the onions. Made for my French jaunt during ZWT5 for the Chow Hounds.

    MMMMMMM!! This was very good!! And a crockpot just makes it so simple! Never thought about freezing French Onion soup, but I bet this would freeze really well! I'll have to try that next time. Thanks so much! Made for ZWT4 Family Picks for the CAFE ZMAKK Gypsies!

    Yummy! I made with sweet Vidalia onions. This soup is so good and I love that it is made in a crock pot. Made for ZWT4 Family Picks for the Tastebud Tickling Travellers.
