Kids love this! I came up with this when company dropped in and my planned Sloppy Joes needed to be stretched. If you have a favorite Joe recipe, feel free to substitute or improvise. That's half the fun of cooking!

SERVES 6 -8 (change servings and units)

Ingredients

Directions

  1. 1
Brown beef and onions in hot skillet; drain grease.
  2. 2
Cook noodles in boiling water for 10 minutes; drain and set aside.
  3. 3
Combine soup, water, chili powder, brown sugar, dry mustard, and vinegar. Stir into cooked meat.
  4. 4
Add drained noodles to meat mixture, stirring gently to avoid tearing noodles.
  5. 5
Spoon beef-noodle mixture into a 9 X 13" baking pan. Sprinkle cheese over top.
  6. 6
Bake, uncovered, at 300° for about 30 minutes.

I thought this would be a nice alternative to pasta or sloppy joes. It is easy to prepare and goes a long way (I might even freeze some of it). I mixed in 1/2 of the cheese and put the other 1/2 on top. DH thought it was wonderful but I thought it could use a bit more flavor. Thanks.

i wanted something easy and good, and i didn't want to spend alot of time cooking since it was just me.so i fixed only half of this recipe(since i have a sweet tooth ,i left in the full amount of brown sugar).instead of putting in the oven i finished on the stove top. i turned off the heat, after adding the cheese i covered the pan and let the cheese melt to make it thicker. when i put a serving on my plate i added a little grated parmesan-romano cheese blend and it tasted very good.if i need a quick meal,i'll turn to this recipe.thank you for posting.

Sloppy Joe sandwiches meets a little bit of Italy.....simiilar to a beefaroni dish with a nice twist. Easy, kid and husband friendly; we all enjoyed it. You could even make this stovetop only, stir in and melt the shredded cheddar for a quicker to the table dinner. I grew up on the same Sloppy Joe recipe; a was nice to incoporate it into a casserole type of dish. Thanks for posting!
