An Egg on the Ritz

Recipe #221857 | 30 min | 10 min prep | add private note

A retro recipe that stands the test of time. These little round beauties are the highlight of any get together. Hard boil the egg, slice in 6 slices, (I use a egg slicer) top with salt & pepper, (I use a course ground pepper) dollop each slice with a zesty bit (about 1/4 tsp or more if you like) ketchup and Tabasco, and slide on to the Ritz. A smooth, but slightly salty and most definitely zesty bit of wonder right onto your taste buds.

SERVES 6 (change servings and units)

Ingredients

Directions

  1. 1
    Slice hard cooked eggs evenly.
  2. 2
Stir together ketchup and Tabasco sauce.
  3. 3
Place slice egg on top of Ritz, add a small dollop of ketchup-Tabasco sauce to top. Garnish with a fresh basil leave, sliced.
  4. 4
Hard-boiled egg method - place the eggs in a pot and cover with cold water by a 1/2-inch. Bring water to a very gentle boil. Turn off the heat, cover, and let sit for exactly (in pot) 12 minutes. After the time has passed place cooked eggs in a bowl of ice, and ice water until ready for use. Peel shell under cold water.

This is a lovely little snack. The crunch of the cracker goes nice with the egg. I mixed ketchup and chili sauce which was fine but I think next time I would just use straight up chili sauce. The kosher salt and freshly ground pepper really add to the flavour. Thanks for sharing this tasty treat.

It doesn't get any easier than this! We had a few variations of these last night. We don't get Ritz crackers here so I used some local whole wheat crackers that are heavy on the sesame seeds. Some kids just had theirs with ketchup and no Tabasco, and I had mine with just Tabasco, no ketchup. We had fun making these up as we were eating them and also added some tehina to some, some mustard to others. One of my daughters spread the cracker first with cream cheese before adding the egg. The kids had a lot of fun and this was a good supper with tomato lentil soup and a salad.

Outstanding? Yes! I saw Andi's photo and just had to try these. I love boiled eggs but am just tired of boiled eggs and toast. These a just the thing for a change. I love the buttery taste of the Ritz, along with the tang of the ketchup and hot sauce. Thanks Andi!
