Slice of Tuscany - Oaty Caramel Slice

A scrumptious slice, filled with gooey caramel

SERVES 8 -10 (change servings and units)

Ingredients

FOR THE OATY SLICE

FOR THE CARAMEL FILLING

Directions

    Heat oven to 180°C.
  2. 2
    Prepare slice by combining ingredients and press 2/3 of mixture into greased swiss roll tin.
  3. 3
    Prepare filling by combining ingredients in a saucepan and bringing gently to the boil. Take care not to burn. Spread evenly over the slice base.

    Sprinkle remaining 1/3 base mix over the top of the slice in a crumble-style.
  5. 5
    Bake for 30-40 minutes.
  6. 6
    Slice when cool.

A delicious, soft bar cookie with a bit of caramel and hint of coffee. I substituted old fashioned rolled oatmeal for the whole wheat flour (this is Oaty Caramel Slice after all), reduced the baking soda, brown sugar and butter in the crust by half. I baked this moist dough in a 8x8 pan for just under 25 min. because it would have burned if I'd left it in any longer.
