This is a really delicous salad. It was simple to prepare, very budget-friendly and had wonderful flavor! The directions did not state to add the mayo and I forgot it was in the ingredient line-up. I ate my first helping without the mayo and thought the recipe was pretty darn good. BUT when I went for a second helping , I looked down at the ingredient list and remembered that mayo was suppposed to be in there. I added an appropriate amount for the portion I had left...tasted it...and WOW...loved, loved, loved it with the mayo. I think it's an important step. The only tweak I'll do next time is to decrease the ginger because it was just a little bit too much for my tastes. I will definitely be making this again. In fact, now I'm craving it! Good job.

This was really yummy. I really enjoyed the mandarin oranges in this dish because you can really taste them. They added a nice refreshing flavor. I do think that I would have enjoyed the overall dish more if the noodles were not cooked. I let mine sit in the fridge for about 20 minutes to cool it. I liked the topping of the chow mein noodles but topping with sesame seeds would be great too. Made for dining on a $ cooking contest.

I like asian slaws & try countless versions because I enjoy the ingredients. This is the first I have tried with cooked noodles. It really wasn't as much an Asian slaw as a nice, non traditional chicken salad. After draining the noodles I loosely chopped them into about 1" pieces. The dressing surprised me. It was pleasant & well flavored when I added it to the salad. It also had a nice yellow color which mixed well with the colorful salad. Adding the finely diced chicken however made it go a bit bland and it needed more seasoning. Adding the crunchy stuff before serving was a good touch and finished things off nicely. I could see serving this on a bed of romaine or even in a wrap. I know I will be using the dressing again. Thank you for your entry & good luck in the contest!
