Skinny Mashed Potatoes

I have a meat and potatoes guy who could live on potatoes and gravy. This is how I make it healthier and lower in fat!

SERVES 10 (change servings and units)

Ingredients

  • 6 cups potatoes, peeled and cut

  • 1 (14 1/2 ounce) can chicken broth (regular or reduced fat)
  • salt and pepper, to taste (the broth has enough salt for most people but taste them first and season if you wish)

Directions

    Boil potatoes until tender and drain well.
  2. 2
    Combine potatoes and broth in a bowl and mash to desired consistency.
  3. 3
    Season with salt and pepper if desired.
  4. 4
    Tip: For a 'buttery' look without the butter, add a few granules of chicken bouillon- Thanks SusieQusie! You could also add some butter flavored granules like Butter Buds or Molly McButter).

Wanted to love these, just couldn't get on board. For myself, it was too much liquid for the potatoes. I guess maybe I had bigger pieces when measuring, but did 8 cups of potatoes and 12 oz of broth. Didn't look appealing, and we didn't enjoy the taste, just blah. Giving three stars though, because my toddlers actually liked them - only mashed potatoes THEY have ever liked.

    Love these and so tasty even if they are low fat; my DH didn't even notice there no butter,just coomented that they were very good. Thanks for psoting. Rita

    Loved these guilt free spuds. I used some of my own home made stock. Nobody noticed that there was no butter/milk/cream.
