Skillet Steaks With Onion Gravy

From an Easy Everyday Cooking Card. Beef on the Stovetop.

SERVES 4 (change servings and units)

    Measure broth in a large measuring cup, whisk in ketchup, Worcestershire sauce, mustard and pepper.

    Set aside. Heat a large skillet over medium high heat. Add steaks; cook for about 4 - 6 minutes on each side (depends on how well you like them done) Remove from skillet cover and keep warm.

    Drain off fat from pan.

    Thinly slice onions.
  5. 5
    Add butter to skillet and melt, then add onions.
  6. 6
    Cook about 3 minutes stirring occasionally.

    Cover and reduce heat to medium low and cook about 5 more minutes.

    Stir in broth mixture and cook until heated through about 2 minutes.

    Pour over steaks and serve immediately.

This did not turn out quite as well as I hoped it would. I found the gravy a bit heavy on ketchup flavor. I recommend caramelizing the onions very well, which might balance the flavors better (I did not; simply softened them.

    This was fantastic. I used cube steaks, and like a previous reveiwer, let the steaks simmer in the gravy for 30 minutes before serving. I also doubled the gravy so that I'd have extra to serve over mashed potatoes on the side. Terrific! Thank you for sharing.

    This is a great recipe that I will be making over and over again. The only thing I did different was add a small tin of tomato sauce mixed in with the broth ingredients so there would be more gravy and it turned out to be delicious.
