Simply Elegant Green Beans

The recipe title says it all, simple, yet elegant. Wonderful green beans using walnuts, goat cheese and balsamic vinegar. Simple company dish or great for those of us who like to eat as if we were having company! Reduces easily.

SERVES 4 (change servings and units)

Ingredients

  • 1 lb fresh green beans, ends trimmed
  • 1 tablespoon olive oil
  • 1/2 cup walnuts, coarsely chopped
  • salt and pepper
  • 2 tablespoons balsamic vinegar
  • 3 ounces goat cheese, crumbled

Directions

  1. 1
    Steam green beans in boiling water until crisp-tender (4-6 minutes).

    Drain and set aside.
  3. 3
    Heat olive oil in skillet over medium heat, add walnuts, and toast in oil for about 3 minutes.

    Add green beans, salt and pepper.
  5. 5
    Sauté for about 3 more minutes.

    Add balsamic vinegar, toss with beans and walnuts to thoroughly coat.

    Remove from heat.
  8. 8
    Sprinkle with crumbled goat cheese, toss lightly and transfer to serving dish.

Really good green beans-for me I think I put too much cheese on 'em cause they were a bit bitter, but really good otherwise.

    Great veggies! I actually used peas, corn, and spinach rather than green beans but the other ingredients were great! This is a keeper recipe for sure!

    We had these as a Thanksgiving side dish and everyone (except the three year old ) liked them. Because of allergies, I used Creamy Havarti Cheese instead of goat cheese. Thanks for a nice addition to our holiday table!

    These were so great. I actually took them to an easter dinner with friends, and we were having ham and scalloped potatoes. Everyone loved them! They were very, very good. Thanks so much for the great recipe. I will be making these again - FOR SURE!!
