Simply Delicious Roasted Chicken

Ingredients

• 1 teaspoon fresh ground pepper
• 1 tablespoon salt
• 1 lemon
• 2 tablespoons butter, melted
• 2 tablespoons extra virgin olive oil
• 1/2 teaspoon dried thyme
• 1/2 teaspoon rubbed sage
• 1/4 teaspoon garlic powder
• 1 dash paprika
• 3 lbs chicken pieces, cut up, bone in, skin on (breasts, thighs, legs)

Directions

   Put chicken into zipper gallon bag ( you may need to split it into two bags) and add salt and pepper and lemon juice. Once lemon is juiced throw that in too.

   Close bag(s) and refrigerate for 1-2 hours. Remove from refrigerator and allow to come to room temp before baking.

   Preheat oven to 425 degrees F.

   Spray large shallow baking sheet with cooking spray and arrange chicken so it is not crowded on the pan with skin side up.

   Mix butter and oil. Baste each piece of chicken in mixture. Sprinkle with thyme, sage, garlic powder and paprika.

   Bake in oven for 40 minute Remove from oven and let sit, loosely covered with foil for 10 min before serving.
