Simple Tomato-Spinach-White Bean Soup

I made this up one winter when I was too lazy to make minestrone, but wanted something kind of similar. REALLY easy and healthy! Measurements and times are approximate.

SERVES 6 (change servings and units)

Ingredients

Directions

    Saute garlic and onion in olive oil until tender.
  2. 2
    Add tomatoes and herbs and cook until heated through. Season with salt and pepper.
  3. 3
    Add beans and broth, and cook until soup simmers. Check for seasoning.
  4. 4
    Just before serving, add spinach a handful at a time, until wilted.
  5. 5
    Serve--very good with a hunk of crusty bread and a salad.

    Super easy! Very tasty Italian type of soup. DH & I loved it! I purchased a very high quality vegetable broth, which I believe helped with the rich taste. One bowl I served with parmasean cheese & one without. Was very good with or without the cheese. The nice amount of basil and that quality broth gave it a nice distinct taste! This soup was excellent by itself but you could add some tortellini toward the end of cooking or some other kind of cheese on top such as mozzarella. Was nice to have the crusty bread to sop the juice. I will definately cook again!
