Simple Corn Casserole

A simple to make, rich side dish--as much a staple at my family gatherings as the paper plates!

SERVES 9 , 1 pan (change servings and units)

Ingredients

  • 1 (15 ounce) can corn, drained

  • 1 (15 ounce) can cream-style corn

  • 1 (8 ounce) box Jiffy corn muffin mix
  • 1/2 cup sour cream
  • 1/2 cup cream cheese, softened
  • 1/2-1 cup shredded cheddar cheese

Directions

  1. 1
    Combine everything but the cheddar cheese.
  2. 2
    Pour into greased 8-inch casserole.
  3. 3
    Bake at 425° for 45 minutes.
  4. 4
    Top with cheddar and bake and additional 5 min or until cheese is melted.

    Let stand for 10 minutes before serving.

    This was so very easy to make and absolutely wonderful. My son & I both loved it. He is a very picky teenage eater went nuts over this side dish. He ate double helpings 2 nights in a row (he asked me the night after I cooked it if we had leftovers of it from the night before) and asked me to make it again soon! Thanks for posting!

    I regularly make a version of this casserole with butter and eggs instead of cream cheese, and being a southern girl I was afraid I would miss the butter taste. But I honestly didn’t. I used reduced fat cream cheese and sour cream and it came out so rich and creamy that no one would have guessed. Thanks for a new twist on one of my family’s favorites!
