This is a super easy to make "all in one-pot" dinner. The flavors are wonderful. The recipe calls for a whole chicken but I have also made it with boneless breasts and thighs.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

  1. 1
Rinse the chicken and remove"the goodies" from the inside, pat dry with papertowels.
  2. 2
Heat the oil in a large dutch oven or soup pan.
  3. 3
Brown the chicken on all sides.
  4. 4
Mix soy sauce, brown sugar, 1/2 c water, catsup, sherry, red pepper, garlic and green onion together.
  5. 5
    Pour mixture over chicken.
  6. 6
    Cover and simmer 45 minutes.
  7. 7
Remove the chicken to a serving platter.
  8. 8
Dissolve the 2 T of cornstarch in 1 T of water.
  9. 9
Add to the sauce in the pan, over low heat, to thicken.
  10. 10
    Pour sauce over chicken.
  11. 11
We serve this with rice and pour the sauce over the rice as well.

This turned out so fabulous last night. I love how fast it was to put together. I took off the lid and pulled the chicken out and the leg very nearly pulled right off. It was so tender! Put some of the chicken and the sauce over lightly seasoned rice and the whole family loved it. Seconds, thirds, were consumed and I was the lucky one to get it for leftover lunch today. YUM!

This is delicious!! My only complaint is I only used 1.5 pounds of boneless thighs and had virtually no sauce. Next time, I will cook it for less than 45 minutes and increase the sauce ingredients!! Thanks so much for sharing!! :O)

The only change I did, was use chicken breasts (I used 4 of them...that is what I had) but other than that I followed this recipe. I can highly recommend it...and it was easy to do, as most of the time it is simmering...very, very delicious, at least DH and I thought so. We ate it with rice! Yum!! Thanks forsharing this recipe, PVT Amys Mom!
