In an effort to eat healthier, I am trying to incorporate tofu into my life! This was a great introduction. The only thing I will do differently next time is to let the tofu drain (in a coffee filter lined strainer) overnite to remove some of the liquid. I am thinking it will make the mousse denser and creamier. MMMM.......

Excellent! I used 1/4 cup Splenda sugar substitute and 1/2 to 1tsp of powdered Stevia to sweeten. After I divided the mousse into serving dishes, I made up a box of sugar-free fat-free vanilla pudding and put it on top for a little parfait. Yum!
