Ingredients

Directions

    In large saucepan, bring stock to a boil.
  2. 2
    Add lentils, tomatoes and garlic.
  3. 3
    Quarter 2 onions- add to lentil mixture.
  4. 4
    Chop remaining onion- set aside.
  5. 5
    Partially cover pan- simmer 45 minutes or until lentils are tender.

    Melt 1 tablespoon butter in skillet.
  7. 7
    Add chopped onion- saute until light browned.
  8. 8
    Press lentil mixture though a sieve- or puree in blender or food processor.

    Reheat in saucepan- season with salt, pepper and cumin.

    Stir in remaining 1 tablespoon butter.

    Pour into a tureen or serve in individual bowls.

    Sprinkle sauteed onion over top.

    Serve with lemon wedges.

Thanks for the great recipe! Really quick and simple. I used a whole head of garlic and red lentils - it's a keeper!

    Wonderful tasting soup. I didn't add the sauted onions or the butter in an attempt to cut some fat. I also added lemon thyme. I'm adding this to my comfort food list for cold winter days. Very yummy and easy to make!
