Shrimp With Feta Cheese

This dish, served over hot rice or orzo, has white wine, lemon juice, olive oil and wonderful herbs. You may use dried herbs or fresh. Double the amount of herbs if using fresh. The feta cheese is sprinkled on top. Posted for ZWT 4.

SERVES 4 (change servings and units)

Ingredients

Directions

    Cook and stir onions and garlic in oil in large skillet over medium heat until onion is tender.
  2. 2
    Stir in wine, basil, oregano, salt, red pepper and tomatoes.
  3. 3
    Heat to boiling; reduce heat. Simmer uncovered 20 minutes.

    Stir in shrimp and lemon juice. Cover and cook until shrimp is pink, 3 to 5 minutes.

    Sprinkle with cheese and parsley.
  6. 6
    Serve with hot cooked rice or orzo pasta.

Delicious thanks Mary. I made a half recipe, but still used all the garlic and feta cheese. I used a hot red chilli instead of the ground red pepper-it had the perfect amount of heat fr us.

    This has a nice flavor, somewhat different shrimp recipe, but I liked the change. Served it with a Greek salad. I served it over orzo pasta.

    Made for ZWT 4 and we loved it. Had it for a real feta-full evening with "Cucumber, Olive, Radish and Feta Salad" and both were great and went together well. This shrimp dish is easy to put together, we served it over orzo pasta.

    Mmmmm - this was very tasty. I didn't have quite enough canned tomatoes so added in a 4 oz can of diced green chiles. Used full 1/4 tsp of cayenne rather than a dash. We'll be making this again - was wonderful over pasta. After working all day, I liked how I could go sit & relax & enjoy a glass of the wine once I'd poured some into the mix and could leave it to simmer. Made for ZWT4
