Shipwreck Casserole

This is probably my number one casserole dish that I always make. It is also a nice easy one-dish meal since you have your protein, veggies, and grains all in one.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Slice onions in the bottom of a baking dish. Add thinly sliced potatoes.
  2. 2
    Over potatoes spread hamburger. Next add uncooked rice. top with a layer of chopped celery.
  3. 3
    As each layer is added season with salt and pepper to taste.
  4. 4
    Combine soup with an equal amount of water and pour over all.
  5. 5
    Cover and bake for 2 hours at 350°F.

I doubled this recipe because I didn't think it would fit in a 13x9 casserole dish. I was mistaken. I also forgot to add the hamburger so I had to fry and add it afterwards. That being said it was ok. Some of the rice was still hard even after I checked after 1 hour and added an additional cup of water. I'm hoping that when I make it next week the hambuger grease will help keep my pan from burning so badly and fluff up that rice. I plan on making as written next week and see if things go better.

    I have to give this 3 stars because we just "liked it." The family thought it was rather plain and bland. I liked it because you put it together and really don't have to touch it for another 2 hours. I would make it again, but definitely add some other seasonings or flavors into the mix. Maybe some garlic, cajun seasoning or something. Not quite sure; just know something was missing. Thanks anyway.

    This was very good but quite differnt from what I usually cook. I wanted to try this because it is quick and easy to prepare and will probably reheat nicely. I did grease the form before filling it. - I was relunctant about having the flavoring come only from a canned soup, but went with the recipe, only topping the casserole with a sliced tomato during the last 15 minutes, when I checked for doneness and some parsley for a pretty look. - I cannot have eaten canned soup within the last 20 years or so and was therefor not used to its flavor. I did miss a little something fresh in it. So, when doing it again, I'll make up my own soup by pureeing some canned tomatoes with vegetable broth, salt, cayenne, garlic and some herbs such as basil or thyme. - Other than that I especially liked the combination of potatoes and rice, both favorites of mine. Thank you for a good new recipe.

    This went over really well at my house. I was a little worried that not cooking the meat beforehand would make it too greasy. I used extra lean ground beef, and it was not greasy at all. This was super easy, too. Thanks for a great recipe.
