Sheri's Slow Cooker Beef Stew

Recipe #53932 | 4¾ hours | 45 min prep | add private note

By: Narshmellow
Feb 12, 2003

I love beef stew. I am not fond of canned stew and have read many recipes and finally just took a little from one and a little from another and just added the things I like. This one my family loved so it's a keeper!

SERVES 5 -6 (change servings and units)

Ingredients

Directions

  1. 1
Place diced potatoes and sliced carrots in a large microwave safe bowl, cover and cook in microwave for six minutes until potatoes are partially cooked.
  2. 2
Heat oil in a large skillet.
  3. 3
Place flour in a gallon sized plastic bag and coat meat.
  4. 4
    Brown meat in skillet.
  5. 5
(Remaining flour in bag will be used as thickener) Put potatoes and meat in crock pot.
  6. 6
    Add remaining ingredients.
  7. 7
Add flour from bag along with enough to make 1/3 of a cup of flour.
  8. 8
Stir well and let simmer on low for 4 hours.
  9. 9
If not to desired thickness you may remove cover and turn to high, stir every so often.
  10. 10
Or add more flour or some cornstarch dissolved in a little water.

Except for the mushrooms, I followed this recipe exactly, and found this an agreeable, great-smelling, easy, "comforty" stew. DH & I agreed not to 5-star it, though, just because we thought it wasn't something we'd find in a restaurant or something we'd make for company. But it's still good home-cookin'!

Wonderful! What more can I say. I followed the recipe exactly. I did double it - it almost didn't fit in my huge crock pot! I doubled it with the intention of freezing half. No such luck. My family saw to it that there was none left for freezing!

My son had a baseball game last night, so dinner in the crockpot was a necessity. This is the first time I've made beef stew in the crockpot, everyone loved it. I didn't add mushrooms (we don't care for them) and I did add frozen corn and frozen green beans, other than that followed the recipe exactly. The house smelled wonderful when we came in. Thanks for a great recipe Narshmellow!
