This is from Ireland. Now I'm not sure when Ireland started making feta and ricotta cheeses but it's intro reads: "Cheeses made from sheep's milk are quite popular in Ireland, and this tasty concoction uses two - feta and ricotta. Whether your feta and ricotta come from the milk of sheep, cows, or goats, the mixture will be delicious."

2 cups (change servings and units)

    In the bowl of a food processor combine the cheeses and process until smooth.

    Add the brandy and puree.
  3. 3
    Fold in the green onions, pine nuts, and dill and continue to fold until the mixture is well blended.

    Spoon into a 2-cup decorative serving bowl.
  5. 5
    Cover and chill at least 2 hours.
  6. 6
    Serve with French bread, crackers or crisp breads.

    I tinkered w/your recipe a bit, but the outcome was yummy good & stayed true to the heart of the recipe. Green onions & fresh herbs are rarely available here, so I used chives + dried dill & added garlic (a must for me). Everything works here & I esp loved the brandy flavor & the textural crunch of the pine nuts. I served it w/Baked Tortilla Chips by echo echo + adds as shown in the pic. I loved every bite of my lunch chow today, Annacia. Thx for sharing your recipe w/us.
