These are a delicious and different way to prepare green beans. I made these for a dinner party, doubled the recipe and there was not a bean left.

Ingredients

Directions

  1. 1
Preheat oven to 450 degrees. Line rimmed baking sheet with foil, spread beans on baking sheet.
  2. 2
Drizzle with olive oil and sprinkle with 1/2 tsp salt; Using hands, toss to coat evenly, and distribute in even layer.
  3. 3
Roast in oven for 10 minutes.
  4. 4
While roasting, combine garlic, ginger, honey, sesame oil, and red pepper flakes in small bowl.
  5. 5
Remove beans from oven. Coat beans evenly with the garlic/ginger mixture; redistribute in even layer.
  6. 6
Return to oven and continue roasting until beans are dark golden brown in spots and starting to shrivel, 10-12 minutes longer.

followed as directed, except added extra sesame oil for extra heat. Next time around, tho, I will roast them for less time...they ended up a little too dry.

I was so hoping someone would post this Roasted Green Bean recipe from Cook's Illustrated! I usually do the plain version (green beans, olive oil, salt & pepper) but this variation is very good too. I think this is my favorite Christopher Kimball feature EVER. Two of us can easily finish off one pound of beans, and still be wanting more. I had posted copies of that article & recipes in the break room when this recipe came out last fall, and had several co-workers that raved about these beans. Thank you for posting a recipe that is sure to become a classic!

These beans were very good! The sauce was a unique blend of flavors. Next time I will probably use a little less olive oil, just as a personal preference.
