Very nice combination of flavors. Not too high in calories.

SERVES 3 (change servings and units)

Ingredients

Directions

    Saute carrots, garlic and ginger in sesame oil, over medium heat for about 5 minutes.

    Add sesame seeds.
  3. 3
    Cover and saute for another 3 minutes or until carrots are heated but still crisp.
  4. 4
    Serve.

These carrots are excellent, Bergy. I have the dark sesame oil, which is quite strong, so I used maybe 1/4 tsp of it so it wouldn't overpower the rest. I finished the dish off with some honey, maybe 1 Tbsp, to give it some nice sweetness and shine. Thanks for posting! --Heather

    This was such a great recipe! We didn't have a lot of time and we were looking for a vegetable side dish for dinner and this was just perfect! The blend of spices was absolutely wonderful! Who knows carrots could be so tasty?

    It's been over half hour after dinner and I STILL can't get over how awesome this dish was!!! The combination of carrots, sesame, ginger and garlic is simply out of this world, with each ingredient contributing in its own special way. This recipe is perfect in every way, and even though I usually HAVE to add salt to everything, I didn't even need a sprinkling of it here! The only thing I changed(?) was in not chopping the sesame seeds, because, um, they're so tiny anyway! I can't gush enough over this, Bergy... thank you sooooo much!

    Very good. Very simple. I too skipped the chopping of sesame seeds. they are so little! A big hit all around. thanks!
