Sesame Cucumber Salad

This has a unique flavor and is an easy dish for a summer picnic. Great when the cukes are bursting out of the garden!

SERVES 8 (change servings and units)

Ingredients

Directions

    Place cucumbers in a colander, sprinkle with salt& toss.
  2. 2
    Let stand for 30 minutes.
  3. 3
    Rinse cucumbers& drain well.
  4. 4
    In a large bowl, combine the onions, garlic, soy sauce, vinegar, oil, sesame seeds& cayenne.

    Add cucumbers& toss to coat.
  6. 6
    Cover& refrigerate until ready to serve.

    I really like this dish. I made it with lemon cukes (because my garden is bursting with them) and omitted the green onion and replaced with a little red onion (too lazy to go to the store).

    I loved this cuke salad. I made it as written, halving the recipe. The only thing I may do different in the future is to peel the cucumber if they're larger ones as the skin was a bit tough, but that was my problem. I love the color contrast of the dark and light green so I may just use smaller, more tender cucumbers. Or, maybe I'm just making too big of a deal about the skin altogether!! Anyway, thanks for this recipe KeyWee, I love the flavors in this salad
