Sensational Strawberry Summer Trifle

This is great for you guys that have a summer Christmas here in the Southern hemisphere, or anyone else anywhere on the globe! We use to make the traditional trifle with jelly each year, but after I made this one year, we stuck with it! The recipe was originally from the BBC Good Food magazine, but I've made my own variation...

SERVES 6 , 1 Dessert (change servings and units)

    Break up sponge fingers into a large bowl and scatter over the strawberries.
  2. 2
    Mix sherry and orange juice and drizzle over spongefingers and strawberries.
  3. 3
    Leave to soak for 15 minutes.
  4. 4
    Beat the mascarpone, then gradually beat in the custard.
  5. 5
    Spoon the custard mix over the sponge, scatter over a few strawberries and the crumbled flake and serve! (I usually let it set in the fridge for an hour or two).

    You can use any of your favrout berries for example:gooseberries, blueberries or make a mix of different berries.

    You can make individual deserts by making the trifle in glasses or small desert bowls.

    I've used orange flavoured Flake before and it works like a charm! Yummy!
