Scandinavian Cucumbers

My mom used to make this in the summertime with cucumbers fresh from her garden. It became a family favorite. I use my mandoline to slice the veggies very thin. I hope you enjoy this cool summertime salad as much as we do! Cooking time is chilling time.

SERVES 4 -6 (change servings and units)

    Combine sour cream, parsley, vinegar, sugar and dill weed.

    Gently add the onion and cucumber slices.

    Cover and chill.

    Best if served the same day.

    Oh So Good! The tarragon vinegar works so well with the sour cream and dill. We loved this! With a whole bottle of tarragon vinegar to use, I know that we will LOVE having this recipe again, and again! Thanks for sharing my buddy, Laurel! This recipe is the bomb!I'm about to head to the fridge for the last of it now, before DD beats me to it!

    This recipe is awsome. I added about half the sugar and double the dill (fresh from the garden). I'll be making this all summer long. Thank you so much!!
