Sauteed Zucchini

A quick and easy zucchini recipe to be used as a vege on the side

SERVES 4 -6 (change servings and units)

    Cut the zucchini into small cubes. I usually cut them a couple of times lengthways and then slice them across to make smallish cubes or wedges.
  2. 2
    Sauté the shallots in the oil for a few minutes until softened. Add the diced zucchini and cook over a medium heat until almost cooked thru (about 15 minutes).
  3. 3
    Add the chopped parsley and salt to taste .Continue to cook for another 5 minutes , or until the zucchini is fully cooked.

Aussie Swap 30: Jubes - delicious, simple and easy to make! Had to add a bit a garlic - always do! It was excellent!

    This was great! I just sauteed it up for lunch. I love zucchini but my family does not so I reduced the zucchini to 1 pound and have leftovers for lunch tomorrow. I made this for ZWT5 for the Cooks with Dirty Faces. Thanks for this quick and delicious recipe.

    We love zucchini! Our garden won't produce for a month or so (if the weather EVER gets warm), so I had to buy it. I also had one small yellow squash in the frige, so I added it...it looked pretty together! I sauteed the shallots on medium high heat to caramelize them, then added the squash. I sauteed on higher heat because we like our vegies to be a bit browned. Also added garlic. Sorry for messing with the recipe, but we loved it, and I will make cubes from now on, so much easier than dealing with a panful of slices. Thanks **Jubes** Made for ZWT4 and enjoyed!
