Sauteed Brussels Sprouts With Walnuts

A healthy recipe from Chef MD (John La Puma, MD). Recipe published as Diabetic friendly in Walgreen's Diabetes and You. Sounds wonderful. They recommend serving this as a healthy holiday dish. States dietary exchanges are 2 vegetables, 1 lean meat and 2 fats.

SERVES 4 (change servings and units)

Directions

    Trim off stem ends and thinly slice sprouts crosswise.
  2. 2
    Heat oil in a large nonstick skillet or saute pan over medium heat.
  3. 3
    Add sprouts, garlic, salt, nutmeg and pepper. Saute 2 minutes.
  4. 4
    Add broth one tablespoon at a time and continue to cook until sprouts are crisp-tender (will take approx 8 minutes).

    Stir in walnuts and transfer to a serving dish and top with cheese.

Love that you dressed up the lowly Brussels sprout with out drowning it in butter, yeah for both you and the Brussels sprout. The nutmeg and garlic play in the back ground, while the Brussels sprouts, walnuts and parmigiano-reggiano cheese dance happily a crossed your tongue. And with such a performance how could your lips do any thing other then smile. Thanks so much for the post.

    This is a great change-of-pace from the traditional steamed Brussels Sprouts. I enjoyed these very much. The toasted walnuts really accentuated the sweetness of the vegetables. Thanks for posting this.
