Very easy, very good quick solution for lunch or dinner.

SERVES 4 (change servings and units)

Ingredients

  • 1 (16 ounce) package Jimmy Dean sausage or other type sausage

  • 2 large potatoes
  • 1 large onion

  • 1 (10 3/4 ounce) can condensed golden mushroom soup or tomato sauce
  • salt and pepper (optional)

Directions

  1. 1
Slice the sausage and partially cook to eliminate fat, drain.
  2. 2
Cut the potato in half and boil, drain, and slice.
  3. 3
Slice onion thinly and dry fry to soften and eliminate the "bite" that often accompanies fresh onion.
  4. 4
Place sausage rounds in a baking dish.
  5. 5
Place a layer of sliced potatoes over the sausage.
  6. 6
Add the onion rings over the potatoes.
  7. 7
    Continue to layer.
  8. 8
Pour undiluted soup or tomato sauce over this mixture.
  9. 9
Cover and bake at 350°F for twenty minutes, remove cover and let brown.

You said it! Very easy and very delicious. I believe I will use a differant potato next time. My Yukon Golds were a bit dry for me in this dish. I used the soup suggestion.

Easy casserole to put together and use up any left overs however I followed the reciupe baked it uncovered the whole time for a total of 45 minutes. I may add a Jalapeno pepper chopped next time but it was very tasty as is. I served it with Oven baked green beans & Steamed CauliflowerThanks Stella Mae for an easy make again casserole

Very-easy-to-make fast supper. I added baby carrots to this recipe without any problems. I think this recipe can very easily be classified as end-of-the-week meal since it uses things staples that are usually on hand.

This is great! A real winner! I put in half a can of green beans left from last night's salad. I've used Golden Mushroom Soup for Shepard's Pie for years [a Campbells recipie], but it never ocurred to me to use sliced potatos. This with the sausage was really good. Thanks for a new "old standby".
