Sausage Breakfast Muffins (OAMC)

This is a recipe I found online and adapted to suit my family's taste. You can use either Chorizo or regular bulk breakfast sausage, depending on your tastes. They're both good. If you like spicy foods, add a 4 oz can of chopped and drain green chilies.

SERVES 48 (change servings and units)

Ingredients

    Line muffin tins with paper liners, and set aside.

    Fry, crumble and drain sausage.
  3. 3
    Preheat oven to 375 degrees.
  4. 4
    Mix together bisquick, cornmeal, eggs, and milk.
  5. 5
    Add drained sausage, and cheese, and stir well.
  6. 6
    Ladle the filling into the prepared muffin tins, filling almost to top.

    Bake for 11-15 minutes.

    Allow to cool completely.

    Store in freezer in a large airtight container.

    Or place each in a sandwich bag, and then place a dozen in a large ziploc bag.

    Microwave on high for approx 90 seconds.

Honestly, the convenience of OAMC is perfect for me as a single mom, and usually a recipe this highly rated is a sure win for my family. But as others who have rated this low have mentioned, these turn very bland for my family. My kids are pretty open minded eaters, but these were even too bland for them. They convinced our babysitter to let them drizzle syrup over them so there was some flavor, and that was the only way they got eaten. Now, as someone else mentioned, I have a couple dozen boring, bland muffins that aren't going to help me beat the morning craziness at our home. The comment at the end of the recipe says, "if you like spicy foods, add green chilies." Well, my children don't tolerate spicy foods very well, so I decided to make the recipe "as is." "As is" my children will not eat them, and I only choked 2 down to try to encourage them. The texture isn't impressive, and there is no flavor. I hate to throw food away, but it's going to take a lot of syrup from my kids to choke these down. I suppose if you added a good amount of garlic, pepper, possibly onion and salt, these might have a decent flavor. I had hoped I'd like the original flavor enough to work with alterations the next go round, but there is now way. I can't waste the time or the money. They are convenient, if only edible.

    these are excellent! i used sausage, and left out the muffin liners due to sticking. also i should add i baked them for 20 to 25 minutes at 375 F and they came out golden brown and so much better than baking for 15 minutes.

    My 7 kids helped me make these lastnight. We used cornmuffin mix instead of cornmeal. I made another batch with ham in place of sausage. We used bakers joy spray after the first batch stuck. I am trying to post the picture. The kids love them.

    I made these without the green chilis for the kids. I would love to experiment more with peppers, onions, etc. Mine seem to stick a little to the liners - next time I'll try without. My daughter has requested some for her freezer at college!
