Sauerkraut Soup

This is a recipe passed on to me by a friend. I love it on cold evenings, especially for the smokey flavour the sausages give the soup.

SERVES 8 (change servings and units)

Ingredients

Directions

    In a large saucepan, add sausage, potatoes, onions, carrots and chicken broth.
  2. 2
    Bring to a boil, reduce heat and simmer for around 30 minutes, until potatoes are cooked.
  3. 3
    Add sauerkraut and tomato paste, mixing well.
  4. 4
    Return to a boil, reduce heat, cover and simmer another 30 minutes.

    Love this soup. I suatee the sausage until golden brwon, and saute the inions until soft before adding the carrots and chicken broth. It enhances the flavor of the sausage.

    I have made this recipe for years. It is very good on a winter day with some homemade bread. Add some minced garlic and a teaspoon or two of black pepper. Also rinse the kraut before adding it cuts down on the sodium content.

    Very quick and simple, and full of flavour. The tomato paste makes it surprisingly thick. I used a lean smoked turkey sausage, which was unfortunately a little bland, so be sure to use a good strong spicy sausage to stand up to the rest of the soup. I found that 20 minutes cooking for each half was plenty.
