Santa Fe Beans and Rice

One of my favorite frozen weight watchers dinners is Santa Fe Beans and Rice. This is my knock off version that comes pretty close.

SERVES 8 (change servings and units)

Ingredients

Directions

    Preheat oven to 350.
  2. 2
    In a large bowl, combine beans, corn, tomatoes, salsa, sour cream, 1 cup cheese and cooked rice. Season with salt and pepper.
  3. 3
    Transfer to a greased 2 quart baking dish and top with onions and olives.
  4. 4
    Bake uncovered for 30 minutes. Sprinkle with remaining 1 cup cheese and bake 5-10 minutes longer until cheese is melted.

    This is tasty! My boyfriend and I both loved it! He loved the spiciness, but I would like to make it with regular tomatoes, instead of Rotel, next time. I'll definitely be making this again! I served this with homemade enchiladas and refried beans.

    Santa Fe Beans & Rice is my favorite WW dinner - I eat it at least 1-2x/wk - so I was VERY thrilled to find this recipe. I cannot believe how close this tastes to WW version! I have made it with chicken that I cut into 1" pieces and browned w/ "Mexican Seasoning". There was only enough left for me to take to lunch the next day!! Thanks, KelBel for your version of one of "our" favorite dinners....debi

    Delicious! This was a great addition to my growing list of meatless meals. Creamy, hearty goodness. I used non-fat plain yogurt instead of sourcream and omitted the onions for picky eaters. We ate this with tortilla chips and my husband said he thought it would make a great warm Mexican-style dip instead of the normal seven layer dip. So I think I'll be adding this to my appetizer list too! Thanks for posting.
