Salsa Rice

    Mix rice, salsa (I like medium heat, but go with your family's preference) and water in small saucepan.

    Bring to a boil, cover with lid and reduce heat to low.

    Simmer, stirring every 5-7 minutes until rice is tender, about 20-25 minutes.

    This is one of the easiest side dishes I have ever made! And, it tastes terrific! I doubled the recipe and baked it at 350 for about an hour. Delicious! A new favorite! Thanks. Deb!

    It hasn't happpened with me in a long time now because life has really stressed me out, but, as soon as I saw this simple recipe, I knew I had to make it rightaway for dinner for myself. I just did make it for myself and I love it! I would just like to state that it's enough for just 1 serving, and not 4-6 as has been stated. It's really tasty! I used Mild salsa to make it and long-grain white Basmati rice. Very very enjoyable. Thanks a bunch!

    This has been a favorite for us for a while now; who knew replacing those awful salty box mixes would be so easy? I highly recommend doubling the recipe if you are serving your family; my DH and I alone can go through the amount this recipe makes. Also, I typically add a little bit of cumin, garlic powder, and chili powder to add a tiny bit more kick.
