Salmon Steak With Strawberry Sauce

Last week I went to a place called 'The Salmon Shop' and came back heavily loaded, I'm determined to eat all the 30 salmon cutlets in a different way! This is an original recipe I came up with, note the amount of chili and pepper gives quite a spicy result, some might like to reduce the quantity.

SERVES 2 (change servings and units)

    Crush strawberries in a mortar & pestle. Don't go overboard because the sauce looks nicer with a thick texture.

    Mix all ingredients except salmon, oil and garlic well in a bowl and place in refrigerator (can be done ahead of time).

    Cook Salmon on a BBQ or grill. I used a medium BBQ plate for around seven minutes a side.

    Place garic and olive oil in a saucepan and place over medium heat.
  5. 5
    Lightly sautee garlic for five minutes.
  6. 6
    Add the sauce mix to saucepan.
  7. 7
    Cook for 10 minutes, stirring occasionally. Don't let the sauce boil hard, just simmer.

    Once the fish is cooked plate up and pour over the sauce.

    Serve with fresh salad and/or light vegetables.

This is an excellent entree to serve to guests, and I bet they have never had it! My guests loved it and asked for the recipe so they can have it often. No better compliment than that! I served the steaks with a Strawberry and glazed pecan Salad with Raspberry dressing and it was an amazing meal!

    This is a wonderful sauce for salmon it all works really well together. I love the combination of the strawberries with the herbs and vinegar and then the spice from the chili flakes. The only 2 things I did different was to serve it on a salmon fillet and I also added a pinch of sugar to the sauce. This is something I would never have thought of doing Peter and especially not to go with salmon but it really works so well. I served ours over salad garnished with some extra strawberries and it made for a superb dinner. Cheers Peter.

    I enjoyed this dish the other night, and I must say it was fabulous. The only thing if anything I would change would be to try it with a salmon fillet instead o f a steak. The mix of flavors were wonderfully textured and tasty. I would certainly prepare this for my family and/or company. I especially enjoyed the subtle but aromatic flavors in the strawberry sauce. It isn't often that you think of fruit and fish in this particular way. I would recommend trying this dish to anyone who enjoys fish.

    Delicious! I served this last night to my family and a friend, Kymber _71, who all really enjoyed it! They commented on the "strawberry sauce - loving the combination of flavors!" It really works well together and compliments the salmon. I could only get small, Sockeye Salmon but it was grat. Next time I think we will try a Pacific salmon fillet withthe sauce. **Made for Aussie Tag Feb 2008**
