A simple Middle Eastern salad which provides a refreshing complement to Middle Eastern dishes or which can be served as one of a range of dishes in a mezze spread; or be used with falafel and hummus in pita bread.

SERVES 6 -8 (change servings and units)

Directions

    Combine all the vegetables in a bowl.

    Mix the remaining ingredients together in a small jug and pour over the salad.
  3. 3
    Toss well and chill before serving.

I added a some shredded carrot to the mix. DH enjoyed this a side to his spaghetti dinner. Made for Zaar Stars

    What a lovely salad! I made this for dinner, photographed it and took a taste so I could review it, now I'd like to sit and keep eating it and not share with Russell. I had a Lebanese uncle sho was a wonderful cook and these sorts of flavours remind me so much of him and his dishes we enjoyed growing up.

    Perfect proportions of ingredients! Usually when I make a salad like this I just ad-lib everything--this was great to be able to follow. I love mint with salads like this, and I didn't even need to add more garlic Simple, and perfect!

    This was really tasty and easy to make. I didn't have a lebanese cucumber, so used a regular one. I used a serrano pepper for the green capsicum and a red bell pepper for the red capsicum. Made for Spring 2009 PAC.
