I love all different kinds of chili! Last year I entered this into our corporate cook-off and I won for a non-traditional chili similar to this one.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

  1. 1
Simmer beans, half the onions, and half the garlic for 2 hours in the chicken stock or until the beans soften, stirring frequently. Add chicken and salsa.
  2. 2
Saute pepper, spices, and the remaining onions and garlic in the oil and add to the chili.
  3. 3
    Simmer for one more hour.
  4. 4
Garnish with sour cream, Monterey Jack cheese and fresh chopped cilantro.

Great Stuff!! I hate pretty much everything at Ruby Tuesday, including the attitudes of most of the servers, except the chicken chili, and now I can make it myself!! YAYYY!! I doubled the recipe for our large family of 7 good eaters and they love it! I used about 15-16 c chicken broth and let it simmer down with the lid off. Gave it a great rich flavor. I also used three serrano chilies seeded, as they're my favorite. Thanks for an awesome recipe!!

I usually get this every time at Ruby Tuesday's and this version is delicious! I do think I like it even better. Very flavorful and so simple with leftover chicken. Thanks for sharing!

This was fantastic, I substituted dice green chilis for the chili peppers other than that I used the recipe. Excellent
