Low Fat Peanut Butter Oatmeal Cookie

These are FANTASTIC cookies! Just as stated, just an aftertaste of rosemary, nothing overpowering. You definitely get the aroma and halfway through the cookie you start getting the slightest hint of rosemary. Wonderful! I added just a little pure vanilla extract to mine as I hardly make any cookie without it. I also used about a 1/4 tsp. of Cardamom (a nice addition!). I generously sprinkled them with raw turbinado sugar, then patted them down and placed a pine nut in the middle. They came out nice and round and sparkled. I didn't get quite 70 cookies out of the recipe, but I might have made mine a little larger that 3/4" balls. I think I'll make another batch of them. I have 5 huge rosemary bushes outside, and it's so nice to make something that's SO delicious with something still so plentiful in my garden! EXCELLENT recipe. Especially if you love the herb rosemary....and I do.
