These are always demanded for when I make multiple batches of goodies. Note: cooking time is cooling time.

SERVES 12 -18 (change servings and units)

Ingredients

    Line a 9x13-inch pan with waxed paper, cut to fit. Set aside.
  2. 2
    Measure chocolate chips into med saucepan. Stir at low heat until melted.
  3. 3
    Remove from stove, continue stirring until smooth.
  4. 4
    Stir in peanut butter until evenly blended.
  5. 5
    In a large bowl, mix marshmallows and nuts.
  6. 6
    Pour in the chocolate mixture and stir until just combined.
  7. 7
    Spread into pan and refrigerate until firm.
  8. 8
    With sharp knife, cut into squares.
  9. 9
    *Note: Half recipe uses an 8-inch square pan.

These were really good and so easy to make. When I went to the store to buy ingredients, I forgot if the chocolate was suppose to be milk chocolate or semi-sweet. So, i brought both and used them in my batch. It still was good. Next time I will only use 3 cups of marshmallows and increase the nuts to about 1&1/2 cups.

    Very tasty and simple. I used dry-roasted, salted peanuts (without chopping) and I lined the pan with a greased parchment paper to ensure easy removal. If you chill the marshmellows before in the freezer and then wait until the melted mixture is room temp then the marshmellows keep their shape better.

    I threw these together at the last minute (well, really a couple hours beforehand) to take to a picnic and everyone there really liked them. I liked that they were so fast and easy, as well as tasty! I used the microwave to melt the chocolate and added peanuts which I left as they were rather than chopping them (just to save time). Thanks for the recipe Sam!
