Robyn's Crock Pot Herb Roasted Potatoes

This is an easy side dish recipe for the crock pot. Adjust seasonings to your liking because I don't know if the measurements are exact. I also make these in the oven, just bake at 350 degrees for 30-45 minutes or until tender.

SERVES 4 -6 (change servings and units)

    Chop potatoes into half moons (slice potato in half longways, then into pieces). Place into crock pot.
  2. 2
    Add water and sprinkle with all the herbs and seasoning. Stir to distribute the herbs.

    Add butter in separate pieces on top of the potatoes.
  4. 4
    Cover and cook on low for 5 hours or until tender.

    Note: It may take less time to cook, I'm never home to check when they are actually ready! I've let them cook up to 8 hours and they are still good.

I did the oven option and these were very good! I think I would cut the pepper down next time as half said too much. I think more garlic next time too. I sprinkled paprika over the top of them in the serving bowl. This is a great way to do some pretty tasty taters. I will for sure make this again.

    We really did like this recipe. My luck with crock pot potato recipes hasn't been good, but I decided to try this one for my Memorial Day cookout at home and everyone thought they were great. Because of the size of my group, I did double the recipe, but cut used only 6 T of butter. there was plenty of spice to hold the flavor over 5 hours of cooking too which is sometimes a problem. Thanks for the recipe!

    These were great! Very easy to put together. I left out the dill and instead of butter I used butter spray so I could reduce some of the calories. This was a great side dish with chicken. Thanks so much for posting!!
