Roasted Squash Vegetable Medley

I love roasted vegetables, especially squash and mushrooms. When I saw this recipe on Rachael Ray, I knew for me, it would be perfect. Just wanted to share it with others who may love roasted veggies as much as I do.

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 425°F.
  2. 2
    Combing zucchini, yellow squash, onions, and mushrooms in a large bowl.
  3. 3
    Add oil to bowl.
  4. 4
    Toss veggies until all are coated with the oil.
  5. 5
    Combine the seasonings and sprinkle evenly over the veggies.
  6. 6
    Toss again to combine the seasoning and then spread them in a shallow baking pan.
  7. 7
    Place in a hot oven and roast 20 to 25 minutes or until tender.
  8. 8
    Times may vary due to oven temps.
  9. 9
    Toss the veggies with tongs about halfway through the cooking time.

    I reduced the onions some for personal preference. I liked this but found the pepper to be too much.

    Very nice side dish. I used a bit more onion and only zuch. as my yellow squash ended up being bad. I have roasted a lot of root vegetables but not usually summer veggies. While I really enjoyed the poultry seasoning I will probably try Italian seasoning next time. Great as a side with baked fish and fruit salad. Thanks!

    I really love poultry seasoning and have never thought to use it on veggies. The mushrooms turned out especially tasty. Thanks!!
