Roasted Potatoes

My mother-in-law gave me this recipe recently; the lemon juice really gives an unexpected kick to the potatoes.

SERVES 2 (change servings and units)

Ingredients

  • 2 tablespoons lemon juice
  • 4 teaspoons olive oil or vegetable oil
  • 1/2 teaspoon thyme
  • 1/2 teaspoon garlic salt
  • pepper
  • 6 small red potatoes, quartered

Directions

  1. 1
    In medium bowl, combine lemon juice, oil, thyme, garlic salt, and pepper.
  2. 2
    Add potatoes; toss to coat.
  3. 3
    Place in lightly greased baking dish.
  4. 4
    Bake, uncovered, at 450° for 40 minutes or until tender.

Easy and delicious. Used some of the oil blend on asparagus too but they were done a lot sooner! Will make again.

    Terrific! Loved the hint of lemon. This is essentially the same recipe I've always followed for roasting potatoes, with the exception of adding the lemon juice — but boy, it really made a difference. I'll use lemon from now on! Thanks for posting this.

    This is a great way to make potatoes! I followed the recipe as is. I did, however, add some seasoning salt. The cook time is accurate, which helped because I also had salmon in the oven, too. This will become a regular recipe in my house. Thank you, Schwabina, for a great recipe!

    I used 3 large Ilam Hardy potatoes (not red) cooked for about 1 hour and served 4 adults. The lemon is the key to a tasty non greasy roast potato. Thanks for posting.
