Roasted Parmesan Garlic Cauliflower

Yummy and different way to prepare cauliflower. A must try! Number of servings is a guess.

SERVES 6 (change servings and units)

Ingredients

    Preheat oven to 450 degrees.

    Grease large casserole dish.
  3. 3
    Place olive oil and garlic in large resealable bag.
  4. 4
    Add cauliflower and shake to mix.
  5. 5
    Pour into prepared casserole dish.
  6. 6
    Bake for 20 to 25 minutes, stirring halfway through.
  7. 7
    Top with Parmesan and parsley and broil for 3 to 5 minutes until golden brown.

This was great! I used Soymage Parmesan cheese substitute and also added some breadcrumbs, a few sprinkles of nutritional yeast, and Italian spice mix. Delish! I also just mixed it all right in the casserole, and since there's already oil there wasn't really any need to grease it.

    EVERYONE loved this.... even my cauliflower "hater" DD. I seriously could have eaten a couple of heads by myself! The only thing I did differently was to leave out the parsley as I forgot to buy it! Thanks Marie for a great addition to our low(er) carb menu!

    very very tasty. not difficult at all. i mixed in half the cheese at the begining and the rest at the end.

    Great change from boiling or steaming! I used an extra 3 tbsp of melted butter in addition to the oil, and just mixed the oil, butter and minced garlic up in the casserole dish. I also had to bake it for an extra 15 mins. I will make this again.
