Roasted New/ Fingerling Potatoes

This is a great side dish for bbqs, steak, roasted chicken, etc. I use the newer small potatoes and fresh herbs to brighten up the flavor.(If you use dried herbs reduce the amount to 2 tsp of each.)

SERVES 4 (change servings and units)

Ingredients

Directions

    preheat oven to roast at 450°F.
  2. 2
    in a casserole dish add potatoes, olive oil, fresh thyme, salt, pepper, and the leaves of 1 sprig of rosemary, crushed.
  3. 3
    roast for 20 minutes, turn and roast 20 minutes more.
  4. 4
    garnish with rosemary sprig.

Super. Didn't have fresh herbs, so I cut to amount in half and used dried. Cooking time was only about 30 minutes. Loved them! Thanks.

    Great great recipe! Loved these, I did add a couple T. of butter and they turned out crispy and yummy....

    Very easy and good potatoes which we enjoyed with Salmon with red-pepper saute Salmon With Red-Pepper Saute. Both recipes cooked at the same temperature and were wonderful together. Thanks for sharing!
