Roasted Kielbasa & Potatoes

Another recipe from Mom. These are good and easy to throw together.

SERVES 6 -8 (change servings and units)

Ingredients

  • 5-7 potatoes, washed and cut up into bite-size chunks (skin on)
  • 1 package kielbasa, cut into bite size pieces
  • 1 package dry onion soup mix
  • 1/4 cup canola oil

Directions

  1. 1
    Preheat oven to 425 degrees.
  2. 2
    Mix all ingredients in a large bowl.
  3. 3
    Pour into a 9x13" baking pan.
  4. 4
    Cook in oven, covered with foil for approximately 1 hour.
  5. 5
    You can stir after 1/2 hour of cooking.

This simple, quick recipe exceeds expectations. I took a hint from the previous reviewer and added a sliced green pepper, half a sliced onion and 3 crushed garlic cloves. I drizzled some olive oil in the pan and then over the ingredients before baking. It took 5 minutes to prepare and was fantastic. I will be making this often.

    Wow! This was delicious! I like it when I stumble upon a good recipe idea I never thought of. I did add 1/2 green pepper, chopped and 2 minced garlic cloves. I had found another great recipe for coleslaw, #294620 and decided to add this to the menu along with a side of broccoli. Man, did they ever compliment one another in grand style...invited my friend over for dinner and he loved it! Thank you for sharing.

    I added 1/2 sliced green bell pepper, 1 Tbsp minced garlic and 1 chopped meium onion; and WOW~ my husband didn't leave a trace of it for leftovers!

    Hey, this was surprisingly good and gets extra points for being so easy. I reduced the amount of oil and used turkey kielbasa to lower the fat content. I was at a loss about how to serve this, but my kids had the idea of sprinkling it with grated cheese, which was a nice addition. Thanks, Petunia!
