Roasting the garlic mellows the flavor and give natural, caramelized, sweetness.

Ingredients

Directions

  1. 1
    Preheat oven to 350°F.
  2. 2
Clean dirt and roots from garlic, place garlic in the center of a 10x10-inch sheet of aluminum foil.
  3. 3
Pour olive oil over garlic, wrap with foil and roast in oven for 60 minutes.
  4. 4
While garlic is roasting, cut butter into chunks and place in a medium bowl--this will expedite the softening process.
  5. 5
Once butter is softened, add sugar and beat with a hand mixer until fluffy.

Garlic should be soft when you remove it from the oven, peel back foil and let cool till you can handle it.
  7. 7
Pull garlic head apart and squeeze the garlic out of the cloves into another small bowl.
  8. 8
Allow to cool till warm to the touch.
  9. 9
mash roasted garlic paste with a fork, mix with butter and beat for a few moments until combined.
  10. 10
Lasts several weeks in the fridge!
  11. 11
Slather this on Italian bread and place under the broiler until lightly browned for the best garlic bread that you've ever had.
  12. 12
    •Variations:.
  13. 13
Add some crushed red pepper for a bit of zing.
  14. 14
Add some fresh herbs for a greener taste (but use it within a day).

    Add some Italian seasoning.

I made this to use in Lobster Pizza. I made half a recipe but used a whole head of garlic. Delicious.

Steve, this is so very good. I am sitting here eating it as I type. My husband just told me not to fill up on bread before dinner! I am happy to be the first to review this so I can say to everyone- YOU MUST TRY THIS IT IS FABULOUS! I added thyme and I used a whole head of garlic for 1/2 the butter and sugar Thanks!

We've tried this several times and have decided we prefer no sugar--just our personal tastes. Thanks to this recipe, I've nearly always got a stash of garlic butter in my fridge, ready to go.
