Roasted Dijon Potatoes

I usually make these on the grill as a side with steaks.

SERVES 4 (change servings and units)

Ingredients

Directions

    Place quartered potatoes in a bowl.
  2. 2
    In a seperate small bowl, mix together garlic, olive oil, mustard, vinegar, salt, pepper and sugar. Pour this over potatoes and toss to coat.
  3. 3
    Place potatoes in a baking dish and bake at 450 for about 45-50 minutes or until desired tenderness.

    Or, roast on foil on the grill.

Very good potatoes. I didn't have any Dijon mustard, and had already started these, so I used some Creole mustard I had in the pantry. I'll make these again using the Dijon, just to see which one we like best! And we also like them a little crispier. A good solid side that will go in my sides cookbook. Thnx for posting, Parsley. Made for ZWT5 for RRR.

    A very nice potato dish. I really like dijon mustard, so I knew I would enjoy this dish. But I thought the combo of different spices and other ingredients made this a very nice side dish for tonight's dinner. Made for ZWT5.

    These potatoes had tons of flavor, so yummy. I did them in a foil packet on the grill and they were perfect, thanks! Made for The Rail Riding Rowdies ZWT5.

    To start I should mention that I love potatoes. After making these I can see it becoming an obsession!!!! They are wonderful. I was a bit pressed for time so I nuked the potato 1/4's for 3 minutes before proceeding with the recipe. This of course reduced the cooking time to about 30 minutes. Everything else was as as directed and I wouldn't change a thing. We like our roast potatoes fairly crispy so they will appear dark in the photo.
