Roasted Cauliflower

This recipe was originally one of Martha Stewart's but I've adjusted it to make it more to my taste. This has become my DH's favorite vegetable recipe. In fact, we love it so much that the two of us usually pig out on the whole recipe.

SERVES 4 (change servings and units)

    Preheat oven to 450 degrees.

    Trim head of cauliflower and cut into bite-sized florets.
  3. 3
    Dry cauliflower well.
  4. 4
    Drizzle with olive oil (you may need more than 2 T) then sprinkle with garlic salt, pepper, and chile powder.

    You can adjust seasonings according to your personal preferences.
  6. 6
    Toss cauliflower until seasonings are well distributed.

    Pour into a greased baking pan and bake for 20- 25 minutes, stirring once or twice.

    Cauliflower should be a dark, golden brown when baking is completed.

    Remove from oven and pour into a serving dish.
  10. 10
    Top with balsamic vinegar and toss well.

    My family thought this was great. I only had frozen cauliflower and broccoli so I cooked it on the stove, then prepared it according to this recipe, adding some garlic, and baked for 25 min. You could cook it less, but my DH likes it very mushy and it's easier for my 18 mo old to eat. This will be a great side for us. A good way to get my Dh and Dd to eat these veggies!

    I read this recipe while scrolling through the "recipes of the day" section and immediately went to the kitchen to try it! I had a 1/2 of a cauliflower head leftover from a previous meal & threw the ingredients together & had it in the oven within minutes. I went light on the chili powder as I was uncertain, but would go full throttle next time. A really delicious way to cook cauliflower. I grew up eating it boiled only (boring)! What a treat! I have friends & family on Atkins and have e-mailed this recipe to them as well. Thanks for sharing - LOVE TO ROAST MY VEGGIES!

    Wow..this is just wonderful..I have never thought of roasting cauliflower before..and as its one of my favourite vegetables I was looking forward to try something new. The flavourings were a perfect mix and we uhhh scoffed the lot between the two of us! Thanks for sharing.
