Roasted Asparagus With Lemon and Dill

this recipe works well with thicker asparagus. If using the pencil thin stalks reduce cooking time to 3-4 minutes

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 425 degrees F.
  2. 2
    In a shallow dish, toss the asparagus, olive oil and salt and pepper together.
  3. 3
    Lay the asparagus in one level layer.
  4. 4
    Place in oven and roast, uncovered for approximately 10 minutes, or until the asparagus is just tender.
  5. 5
    Transfer to a serving plate.
  6. 6
    Whisk the lemon juice, lemon zest, dill, olive oil and honey together in a small bowl.
  7. 7
    Top the asparagus with some of the dressing and keep the rest on the side.

    We found this far too lemony. Next time we'll double the olive oil and halve the lemon.

    Yummy, Yum, Yum I really enjoyed this. I served this with Chia's Broiled Chicken With Fig Sauce it was delicious. A very simple yet lovely way to prepare asparagus. I am all with you Chia thick stalks all the way so much tastier and pesonally I think more appealing to the eye. Will be making again thanks for posting

    I served this w/your filets with Madera sauce. Nice, easy and crisp. Wonderful recipe. Thanks for sharing.
