Roast Chicken with Cumin, Paprika and Allspice

The Middle Eastern spices infuse a wonderful, exotic flavor to the chicken. The aroma of this roasting in your oven may inspire you to belly dance!

SERVES 4 -6 (change servings and units)

    Preheat oven to 375.
  2. 2
    Rinse chicken; pat dry.
  3. 3
    Place chicken on rack in large roasting pan.
  4. 4
    Stir oil and next 7 ingredients in small bowl to form paste.
  5. 5
    Rub spice paste all over chicken.
  6. 6
    Roast chicken 1 hour.
  7. 7
    Squeeze juice from lemon halves over chicken, place lemon halves inside main cavity.

    Continue to roast until chicken is cooked through and thermometer inserted into thickest part of thigh registers 175, about 1 hour longer.

    Transfer to platter, let stand 15 minutes.

    This was delicious. I didn't make any changes and rubbed the paste onto the chicken underneath the skin.

    Delicious! I didn't have any allspice, but I read that a mix of cinnamon and nutmeg is a good alternative, so that's what I used. I cooked only 2 chicken breasts, but slathered the entire amount of seasoning all over them. Yum!

    Very Good! I rubbed this on chicken breasts, let it marinate for less than an hour and grilled on the outdoor grill. Very simple to prepare. Next time I will add a bit more salt and maybe a little cayenne pepper too! Thanks for posting!
