Rick's Grilled Chicken Penne Pasta

This is a pasta recipe I've been cooking forever. I've changed it slightly over the years, but it's basically the same sauce I've made since I was a teenager.

SERVES 5 -6 (change servings and units)

Ingredients

Directions

  1. 1
    Sauté onions in olive oil until translucent.
  2. 2
    Add garlic and cook for one more minute.
  3. 3
    Add tomato, tomato sauce, tomato juice, black pepper, salt, basil, and parsley.
  4. 4
    Once sauce boils reduce to simmer and add grilled chicken.
  5. 5
    Simmer until pasta is cooked.
  6. 6
    Cook penne pasta in boiling, salted water.
  7. 7
    Strain pasta and add to sauce.
  8. 8
    Serve topped with Parmesan cheese.

    Notes:.

    Add red pepper flakes for arabiatta.
  11. 11
    Add oregano for a spicier version.

    Delicious! Thanks so much for posting. It was easy to make, and with oregano and a pinch of red pepper, there was just enough zing to it. I wish I had fresh parm. to grate overtop, as I imagine that would have brought out the flavor even more.

    Fantastic! I sprinkled a good amount of Italian seasoning on the chicken breasts prior to grilling them. I realized when it was a bit late that I had no fresh basil , so I used dried. Otherwise, followed your delicious recipe, adding both the red pepper flakes and the oregano. We loved it--thanks!

    This is a great recipe, rick! I made as is, except used the immersion blender on our can of tomatoes since we don't like large chunks! I added the oregano and the red pepper (maybe a little too much red pepper!) Was great, but next time I'll probably leave out the red pepper flakes. Served with whole wheat penne. Thanks for posting your recipe!
